Touch of Evil is great.
A couple years ago at the SF Film Festival I saw a french documentary called Vies (Lives)
It had several different segments the first being about the retirement of an eye doctor, the second was on a butcher and the third was on a woman who SPOILER ALERT -- turned out to be the personal assistant for Welles. They go to this deserted house in France somewhere that was his home/office in later years (not sure when) and it was absolutely fascinating. One comment that stood out was that after working for Wells for so many years it cured her of any fascination with celebrities.
